Planning a wedding menu can be pretty tough when you have to consider your guests’ varying dietary needs. But one thing your dinner can’t be without is tasty dishes for vegetarians and vegans – a necessity in 2017, as more and more people opt for ‘streamlined’ diets.

Not got a clue about cool green dishes? Fear not, as BoShow Festival vendor Manjula Caterin is here with three very good dish ideas.

1. Smokey Bean Breakfast Tacos

These tacos are the ultimate if you’re looking for a naughty breakfast. Made up of smokey butter beans, scrambled tofu, pico de gallo and guacamole served in a soft taco wrap, this is a brekkie that’ll look good and really sort you out.

2. The Kerala Burger

This is a burger inspired by our travels to India last December. The burger is made up of a chickpea and sweetcorn patty, with an Indian hash brown (it’s as good as it sounds!), plus avocado and masala ketchup for a real fragrant treat. Your wedding guests will love you for it.

3. The Madurai Pie

This is an interesting dish as although we named it after the a in India, I would recommend never going to Madurai! However, I would recommend this pie, which is filled with spinach tarka dahl and is best served with Indian mash (a recipe taken from a family kitchen in Kerala). Just ddd some caramelised onion gravy and you’re onto a winning wedding menu.
